Walking along the street in any Italian city, you will come upon a storefront that is open to the street, displaying, under a glass countertop, five or six large pans of pizza. These pizzas are not like traditional American pizza, with a layer of tomato sauce and meat, covered by cheese. Instead, these pizzas have a crust that is chewy with olive oil, covered with in-season vegetables combined with ingredients like olives, capers, and tasty herbs, and blanketed with a layer of cheese. You point to your pizza choice and indicate the size of piece you want, the vendor cuts your piece of pizza with a scissors, wraps it in paper, weighs it, and takes your money, and you walk on down the street eating the best pizza you've ever had. This casual gourmet dining experience inspired the concept for Eat This. At Eat This, customers enter the storefront located on East Hennepin Avenue to find themselves in a lively restaurant with red walls, silhouettes of dancing vegetables on a yellow ceiling frieze, and great music playing on an excellent sound system. Depending upon the day, the music can include Cecilia Bartolli, Stevie Ray Vaughn, The Beatles, Verdi, Ustad Vilayat Khan, or the Gipsy Kings. The day's pizza selections are determined by what vegetables are available that morning, as well as by the inspiration of the cooks. Pizzas are made fresh, on-site each day. It was good...but way too expensive for the overall quality. Flavor is one thing...but spending a lot for a slice is another...I think it would be better to just order in! - ncd, 02/07/2002
